Mayo-free Potato Salad

  • 3 lb red potatoes, or 1.5 each red potatoes / sweet potatoes
  • 1/2 cup extra virgin olive oil
  • 1/2 cup apple cider vinegar
  • 1 red onion, chopped
  • 2 tablespoons to 1/4 cup chopped parsley, celery, or kalamata olives
  • 1 tablespoon powdered horseradish or ginger
  • 2 teaspoons dry dill leaves
  • 1 teaspoon each miso, pepper, turmeric, caraway seeds

    Steam potatoes until tender, then ROUGH-mash with peelings still on.
    I only buy organic potatoes, for this reason.
    Toss well to coat.


  • Makes about 8 cups.
