3 lb red potatoes, or 1.5 each red potatoes / sweet potatoes
1/2 cup extra virgin olive oil
1/2 cup apple cider vinegar
1 red onion, chopped
2 tablespoons to 1/4 cup chopped parsley, celery, or kalamata olives
1 tablespoon powdered horseradish or ginger
2 teaspoons dry dill leaves
1 teaspoon each miso, pepper, turmeric, caraway seeds
Steam potatoes until tender, then ROUGH-mash with peelings still on.
I only buy organic potatoes, for this reason.
Toss well to coat.
