Spicy BBQ Beans

loosely based on: Best Dang BBQ Vegan Baked Beans from Brand New Vegan

(Low Sodium Version)

  • 3 cups dried great northern beans
  • 1 quart low sodium vegetable broth
  • 1 large onion chopped
  • 6 cloves garlic, or to taste
  • 4 dried peppers, or to taste
  • 1 tsp to 1/4 cup apple cider vinegar, to taste
  • 1/4 cup molasses
  • 1/4 cup unrefined sugar
  • 1 tablespoon yellow mustard
  • 1 tsp each chile powder, black pepper & turmeric
  • 2 tsp smoked paprika
  • 1 6 oz can tomato paste
  • I made with no added salt. Salt to taste!

  • Soak dry beans overnight, or 8 hours.
  • Cover with water, bring to boil, and simmer for 30 minutes
  • Drain, and transfer to cast iron pot with remaining ingredients
  • Simmer on low heat for four hours.
