Tamarind Date Chutney

  • 8 pitted medjool dates, soaked in hot water 30 min.
  • 1 tablespoon tamarind paste concentrate,
    .......dissolved in 1/4 cup of the hot water
  • 1/2 cup hot water
  • 1/4 tsp each: fennel seeds, ground cumin,
    .......ground ginger, cayenne, black salt, black pepper, hing
  • 1/4 cup powsered jaggery, or unrefined sugar
  • 1 teaspoon ground coriander

    Dry Roast spices for one minute,
    add to tamarind mixture and blend.
    Add remaining ingredients, combine, bring to boil,
    reduce heat, cook for 7 minutes to thicken.
