Mushrooms and Greens

The flavor is worth the visual! :)

  • 4 oz mushrooms
  • 2 cup greens
  • 1 pint home canned tomatoes
  • 1 tsp oil
  • 1 green chilie
  • 4 cloves garlic
  • 1/4 cup chopped cilantro
  • 1/2 tsp garam masala
  • 1/2 tsp coriander (dhania)
  • 1/2 tsp fenugreek leaves
  • 1/2 tsp turmeric (haldi)
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • Heat the oil in a saucepan on medium-high heat.
    Toast the spices
    Add tomatoes, cook 5 minutes.
    Add the rest, cook 5 more minutes.
    *NOTE: Can be made more dry with fresh tomatoes,
    more soup with canned.
