  • 2 tsp safflower oil
  • 1 chopped red onion
  • 3 cups diced potatoes
  • whole container (pint) cherry tomatoes halved
  • chopped spinach frozen whole 10 0z bag
  • 1/4 cup lentils, rinsed
  • 6 cloves garlic
  • 1/4 tsp of Asafoetida
  • 1/2 tsp ea of ground cumin, ground coriander, turmeric, salt
  • 1 tsp ea of garam masala, mustard seeds, cumin seeds
  • Juice of 1 lemon
  • 1 in piece of fresh ginger, grated
  • Chia seeds (optional)
