1 1/2 cups dry beans, soaked 4 hrs
1 TB oil
1 or 2 chopped green chiles
2 inch knob or 2 tablespoons ginger paste
6 cloves garlic
2 tsp garam masala
1 tsp turmeric powder, cumin seed powder, hing, black pepper, lemon juice
1/2 tsp cayenne
1 cup chopped onion
1 quart canned tomatoes
1/4 tsp raw sugar
chopped cilantro for garnish
Heat oil, toast spices, brown onions.
Stir tomatoes and lemon juice into onions, and mix.
Add beans, sugar, cook 30 minutes till sort. Kidney or chickpeas will take 60.
Makes about 11 cups.
