Aloo Matar Sabzi
(Indian Potatoes)

  • 20 oz (average 3) potatoes
  • 1 tsp olive oil
  • 1 cup frozen peas
  • 1/2 tsp salt
  • 1 tsp ea mustard seed powder, cumin seed powder, hing
  • 1 1/2 cup chopped onion

    Steam potatoes, and rough-mash. I like to leave peel on.
    Heat oil, toast spices, brown onions.
    Stir frozen peas into onions, and mix.
    Pour over potatoes and mix.
    Makes about 4 cups.
