Vegan Sour Cream

Ingredients
  • 1 cup raw cashews, soaked for at least 4 hours if you do not have a high-powered blender*
  • 1/2 cup water
  • 1 tablespoon lemon juice, or more if needed
  • 1 teaspoon apple cider vinegar
  • Heaping 1/4 teaspoon fine sea salt
  • 1/4 teaspoon Dijon mustard

  • Soak cashews overnight

    Blend until smooth

    I found it to be a little runny with 1/2 cup water,
    so I added 2 tsp cornstarch.

    Texture will vary, depending on the power of your blender.
