Pistachio Cardamom Cookies

"Taste Like Christmas" :)
--That is what my friend said about this recipe.
Indeed, I have never made a Christmas cookie, vegan or not, that disappeared as fast.
I make them every year, now.

1/4 tsp salt
1/2 cup tablespoons vegan butter or neutral oil
1/2 cup coconut cream
2 cups unbleached white flour
3/4 cup finely ground raw pistachio
1/2 cup chickpea flour
1/2 teaspoon baking soda
1 teaspoon cardamom powder
1/2 teaspoon nutmeg
1/2 teaspoon spirulina (added green)
garnish with raw pistachio
2 cups ground raw sugar
Preheat oven 345. Prepare baking sheet.
Combine sugar, salt butter, oil, coconut cream, whisk.>br?
Combine dry ingredients, then combine with wet.
Add some non-dairy milk if needed.
Form into balls about an inch diameter, Press pistachio on top.
Bake approx. 15 minutes.
Makes approx. 40.
