Sweet Potato ~
Peanut Butter Ice Cream

Inspired by The Vegan 8

Blend until creamy:

  • Approx 1.25 cups mashed baked sweet potatoes
  • 1 cup peanut butter
  • 1 cup chocolate nutiva (or 2 cups peanut butter.)
  • 8 oz. maple syrup
  • 13 oz can coconut cream
  • 2 tablespoons pure vanilla extract

    Freeze overnight
    Makes one half gallon
    I used an old half-gallon sherbert container. :)

    ONE HALF cup contains:
    Calories: 248, Carb: 29, Protein: 5, Fat: 18, Sodium: 40 Fiber: 6

    With 4 oz dark chocolate nibs:
    Calories: 288, Carb: 23, Protein: 8, Fat: 21, Sodium: 64 Fiber: 4


  • Per brownie-sized bar (40 pcs) frozen in cake pan:
    Calories: 115, Carb: 12, Protein: 3, Fat: 8, Sodium: 26, Fiber: 2



    Sandwich Cookie Hack

    Dough from cuccidati
    (with cocoa or carob),
    cut into wafers and
    baked 10 min, 350.
