Classic Oatmeal Cookies
The classic recipe, veganized. ;)

  • 2 cups flour
  • 1 cup unrefined sugar
  • 1/2 cup neutral oil or vegan butter
  • 1/3 cup plant milk
  • 2 flaxseed meal eggs*
    *(2 tablespoons flaxseed meal, 5 tablespoons water, let stand 5 minutes and plop it in.)
  • 3 cups oatmeal
  • Cinnamon and nutmeg to taste. I usually go with a teaspoon cinnamon, 1/2 teaspoon each of nutmeg and cardamom.
  • I also like to add an optional cup of raisins.
  • I never really thought cookes required all that instruction.
    I don't "cream" things together or anything. Mix it up. Plop it out. Cook. Eat.

    Bake at 375 on prepared cookie sheet, 10-15 minutes.
    Makes approx. 36 cookies.
