Creamsicle Ice Cream

  • The coconut cream part ONLY from TWO 13.6oz cans of FULL-FAT coconut milk
  • 3/4 cup orange juice
  • zest of 1 orange
  • 2 tablespoons maple syrup or agave
  • 2 tablespoons cashew butter
  • 2 tablespoons vanilla extract

    Chill coconut milk cans to make easier to scoop out cream.
    Blend everything but the orange zest, add it afterwards.
    I made mine larger, poured into 1 cup pyrex.
    Makes 3 cups.
