Tomato Ketchup
from One Hundred Dollars a Month

  • 4 cups peeled, cored, chopped tomatoes
  • 1 cup chopped onion
  • 1/2 cup sweet red peppers (optional)
  • 1/2 tsp cinnamon
  • 1 1/2 teaspoons celery seed
  • 1 1/2 teaspoons caraway seed
  • 1 teaspoon mustard seed
  • 1 teaspoon whole allspice
  • 1 cup unrefined sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon salt
  • 1 1/2 cups white vinegar
  • Notes:
    I do not peel or seed my tomatoes.
    In fact, I used whole cherry tomatoes.
    There are varying opinions as to whether or not
    you sould safely do this, but I have not yet had a problem
    It is a fact that more bacteria lives on the peel.
    I BOIL THOROUGHLY. The minimum is 10 min. I exceed that.
    Use your own judgement. :)

    The caraway seed is an addition I made by accident.

    Makes 3-4 pints
